I made this for dinner tonight and it was THE BEST chicken and dumplings I’ve ever had! Yum!
YOU’LL NEED
• raw fryer chicken ($2.80 @ United)
• 3 cans chicken broth ($.25 at Walmart)
• 1 container Pilsbury Simple bisquits ($2.30 w/ coupon @ Walmart)
• 1 Can peas ($.50 at Walmart)
• 2tblspn Glory chicken soup seasoning (free sample in the mail!)
• Pinch of salt
Dissolve Glory seasoning in 1 can broth + 2 cans tap water. Place thawed chicken (breast down) in liquid in a large casserole dish. Cover completely with foil. Cook 400 degrees 2 hrs. Pull chicken out of oven, rest for 10 min.
Bring 2 cans of broth to boil with 1 can of water. Add a pinch of salt to prevent foam overflow. Open biscuits, roll out, use pizza cutter to slice into dime penny or nickel sized squares. Drop separated biscuit pieces into boiling broth. Cook until dumplings are semi-transparent & insides are cooked through (approx. 10 min).
Pull chicken off bone and drop into broth & dumplings. Pour chicken stock into dumpling mixture. Add 1/2 can of peas. Simmer on low for 10 minutes. Cool & enjoy!
This feeds a family of 5 for around $1 a serving!
(Don’t throw those chicken bones away! Place them in a large boiler with 4 cups of water and cook on medium for 1-2 hours [depending on your patience level] and drain into freezable containers. You just made chicken stock for your next recipe!)
